It’s always hard to find gluten free baked goods, especially ones that don’t taste like it, but you don’t have to be gluten-free to enjoy these ginger molasses cupcakes. The ginger and molasses flavor in these always reminds me of eating ginger cookies as a child. These are dense and moist cupcakes reminiscent of ginger bread. The molasses flavor is just right without getting too bitter and the simple cream and sugar frosting is light and fluffy.
