It’s the best time of year for people who are big fans of pumpkin. It can be added to anything, including these healthy yogurt cheesecake cupcakes. A vanilla wafer goes on the bottom of each, then a layer of a cream cheese, Greek yogurt, vanilla, sugar, egg white and flour mixture. A spoonful of pumpkin butter is mixed before they go into oven.
