Mini Red Velvet Cupcakes with Orange Cream Cheese Frosting


Red velvet cupcakes are a holiday classic, although they can be made (and enjoyed) any time of the year. These are made with standard red velvet cake ingredients, including cocoa powder, baking soda, sugar, eggs, buttermilk, flour, vanilla extract and red gel food coloring. The main difference is that they are made in a mini cupcake pan instead of a standard one, and that they are topped with orange cream cheese frosting and candied blueberries.
