Carrot cake cupcakes decorated to look like Easter chicks are the perfect spring treat – and the results are so cute that you may not want to eat them. Start by making the cupcake batter (it consists of flour, brown sugar, shredded carrot, sweetened coconut and crushed pineapple, among other things) and then waiting for the cupcakes to cool. Peek off the wrapper and cover the entire cupcake in cream cheese frosting before rolling it in sweetened coconut. Use some almonds and candies for the beak and eyes. The results are adorable!
