Sometimes cupcake recipes are created out of necessity — for example, these apricot cupcakes with almond butter frosting were invented as a way to use dried fruit, since not everyone has access to fresh fruit. The dried fruit is reconstituted and turned into a puree before it is ready to go into the cupcake batter. Creative, right? The batter of these also contains soy milk, honey, ground cloves, nutmeg and cinnamon, and the frosting is a lucious almond butter cream. Useful and tasty!
